TODD ENGLISH’S OLiVES MAKES ITS GULF COAST DEBUT AT
 BEAU RIVAGE RESORT & CASINO

Biloxi, MS – December 15, 2006 – Today, Todd English’s internationally renowned Mediterranean restaurant OLiVES is making its Gulf Coast debut at the luxurious AAA Four Diamond Beau Rivage Resort & Casino. OLiVES is one of three new gourmet restaurants — including steakhouse BR Prime and contemporary Asian restaurant Jia — that will open at Beau Rivage today, completing the resort’s transformation in the aftermath of Hurricane Katrina.

Under the direction of executive chef Joseph Friel, who was named one of the Great Chefs of New York and invited to cook at the renowned James Beard House, the culinary standard at Beau Rivage is on par with the world’s finest resorts. From traditional cooking to exotic international cuisine, Beau Rivage’s distinctive restaurants and cafés offer a multitude of dining experiences.

“Nowhere else in the Southeast, period, can restaurants be created like they have been at Beau Rivage,” said George Goldhoff, the resort’s vice president of Food & Beverage. “No one else has committed the capital to build multi-million-dollar restaurants like BR Prime, Jia or OLiVES. OLives

Created by superstar Chef Todd English, a James Beard Award Winner and Bon Appetit “Restaurateur of the Year,” OLiVES has drawn national and international applause for its interpretive rustic Mediterranean cuisine. With a passion for hearty, ingredient-driven fare, OLiVES serves delectable dishes by Chef English ranging from his legendary flatbread pizzas and homemade pastas to rotisserie dishes, flame-licked seafood and meats.

“I am thrilled to open my sixth OLiVES restaurant in Biloxi,” said Chef Todd English. “I am moved by the passion and spirit of the people in this region in the aftermath of Katrina, and I am eager to share with them my own passions for good food, good wine, and a comfortable atmosphere in which to enjoy them.”

The menu at OLIVES at Beau Rivage features English’s renowned interpretive Mediterranean cuisine. Classic signature dishes include Fig and Proscuitto flatbread with rosemary and gorgonzola and Butternut Squash Tortelli with sage, brown butter and Parmesan Cheese.

Though brand new, OLiVES, at Beau Rivage, is designed to look ages old. Chef Todd English’s vision for the look of his new restaurant was centered in the rustic appeal of an ancient Olive Oil mill. Architect Jeffrey Beers brought this inspiration to life through wide ceiling beams of reclaimed solid oak, crackled wall coverings, weathered wood tabletops, and warm tones of chocolate brown, olive green, rust orange and caramel, set aglow by soft candle light. From the ceilings hang bronze chandeliers shaped like olive tree branches, with tiny candles at the end of each thin stem. At the center of OLiVES’ dining area stands a custom-made, 8-ft. olive oil bottle, filled and ready to serve guests.

OLiVES, at Beau Rivage is the first to feature a retail store selling Todd English’s signature line of creative cookware and appliances, The Todd English Collection, which debuted last year on HSN, the Home Shopping Network. OLiVES, at Beau Rivage is open nightly from 5:00 p.m. to 10:30 p.m.

BR Prime

Only two percent of all beef produced in the United States is certified prime grade by the USDA. BR Prime, Beau Rivage’s signature steakhouse, keeps to those culinary standards and delivers one of the finest dining experiences the Southeast has to offer.

Warm and welcoming, the bar at BR Prime is a place to rendezvous with friends, unwind and prepare for the memorable meal ahead. Delicious gourmet steaks are served within a relaxed, cosmopolitan setting where dramatic shifts of light create an air of sophistication among warm-colored stonework, hardwood flooring and striking walls of glass and wood. BR Prime’s menu features classic American steakhouse fare including wet-aged and dry-aged prime beef, Gulf shrimp, two-pound Australian lobster tails and stone crab. Specialties include Louisiana Crabcakes, Kobe Ribeye, Crab and Pecan Crusted Hawaiian Swordfish and Lobster Mashed Potatoes. BR Prime also features an exquisite wine selection within its 3,500-bottle wine cellar. BR Prime is open nightly from 5:30 p.m. - 10:30.p.m.

Jia

Beau Rivage’s contemporary Asian restaurant, Jia emanates excitement and inspires serenity. Within three distinct dining experiences, Jia dishes out authentic sushi, teppanyaki and pan-Asian cuisine created from simple, quality ingredients. The menu spotlights a variety of soups, salads, noodles and regional specialties from Thailand, Japan, China, Vietnam and Hong Kong-style barbecue.

Beyond its cuisine, Jia’s architecture combines classic Asian concepts with a contemporary world by blending traditionally celebrated elements of nature with modern materials. Upon arrival, guests are greeted by an enormous column of red glass with cascading sheets of water; passing through this cleansing environment allows the real world to be left behind as guests prepare for the culinary adventure ahead. Once inside, soft, elegant teakwood forms a towering abstract forest and reveals glimpses to the sushi bar and lounge areas located near the front of the dining room. Guests can enjoy the freshest Asian delicacies from the sea at the sushi bar, which appears to glisten in a frozen world below striking strands of glass that create a magnificent chandelier. For teppanyaki, Jia honors Japanese tradition with a separate traditional Ryokan structure teppanyaki room, complete with modern custom red lacquer cooking hoods at each table. In the dining room, smoldering lanterns cast shadows from bamboo ceilings to the tables below and walls bordered in opulent draperies glow in a symbolic interpretation of hot coals. At the room’s focal point, beautiful glass chimneys are adorned with hand-glazed pottery by local artisans.

Completing the world-class experience, Jia also features the finest in Earthborn Pottery, signature artisan dinnerware from Leeds, Alabama; and the highest quality Sambonet 18/10 flatware. Jia is open Monday through Friday from 5 p.m. to 10:30 p.m., and Saturday through Sunday 12 p.m. to 10:30 p.m.

In addition to its three new gourmet venues, Beau Rivage features seven other restaurants including Memphis Q Smokehouse & Barbeque, featuring cool blues and hot barbecue; Coast, dishing out pub-style favorites from Coast crab cakes to wood-fired pizzas; The Buffet, offering more than 200 delicious hot-and-cold and made-to-order selections; Terrace Cafe – the property’s 24-hour casual café – offering contemporary and classic American food; Roasted Bean Coffee Bistro, featuring delicious home-roasted coffee, specialty beverages and gourmet treats; Snacks, serving up overstuffed sandwiches, bountiful salads and scrumptious desserts; and Scoops Ice Cream, an old-fashioned ice cream parlor doling out homemade gelato and other delectable sweets.
